  • 3 tbsp extra virgin olive oil
  • 1 medium brown/yellow onion, peeled and finely diced
  • 1 large carrot, washed, finely diced
  • 2 ribs celery, finely diced
  • 3 cloves garlic, finely chopped
  • 170 g cherry tomatoes, quartered
  • 5 cups vegetable stock
  • 1 tsp dried oregano
  • 1/4 tsp dried red chili pepper flakes
  • 1 tsp fresh rosemary, finely chopped
  • 3/4 cup dried orzo pasta
  • 1 1/2 cups curly kale, stems removed, finely chopped and firmly packed
  • Sea salt and freshly ground black pepper to taste
  • 2 tbsp fresh basil leaves, finely chopped
  • Drizzle of extra virgin olive oil

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Sauté diced onion, carrot, and celery for about 5 minutes until softened.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Incorporate vegetable stock, cherry tomatoes, oregano, and chili flakes. Bring to a simmer.
  4. Stir in the orzo pasta and cook for 8 minutes while stirring regularly.
  5. Add chopped kale just before the orzo is al dente; allow it to wilt.
  6. Adjust seasoning as needed. If too thick, add more stock to reach desired consistency before serving.
