  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 4 cloves garlic
  • 1/4 cup sun-dried tomatoes
  • Fresh parsley (optional)
  • Feta cheese
  • 3 tbsp extra virgin olive oil
  • Salt & black pepper
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 lemon (juice only)

Instructions

  1. Prep all ingredients by cutting chicken into bite-sized pieces and slicing vegetables.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken until golden brown and cooked through (6-8 minutes).
  3. Remove chicken and sauté onions and garlic in the same pan until fragrant.
  4. Add zucchini, red bell peppers, cherry tomatoes, sun-dried tomatoes, oregano, basil, and thyme; cook until tender (5-7 minutes).
  5. Return chicken to the pan; toss to combine.
  6. Drizzle with lemon juice, add olives and feta cheese, then garnish with parsley before serving.
