  • 6 large eggs
  • 2 teaspoons salt
  • 2 tablespoons white vinegar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/3 cup honey
  • 1/4 small yellow onion (diced)
  • 4 garlic cloves (minced)
  • 2 scallions (minced)
  • 1 Korean red pepper (sliced)
  • 1 serrano pepper (sliced)
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Soft boil the eggs: In a medium saucepan, bring water to a boil with salt and vinegar. Carefully lower the eggs into the boiling water using a spider strainer or slotted spoon. Boil for 6 minutes for room-temperature eggs or 7 minutes for cold eggs from the fridge.
  2. Chill the eggs: After boiling, place the eggs in an ice water bath for about 10 minutes until cooled completely. Peel each egg gently.
  3. Make the marinade: In a mixing bowl, combine soy sauce, water, honey, diced onion, minced garlic, minced scallions, sliced Korean red pepper, sliced serrano pepper, and toasted sesame seeds. Mix well.
  4. Marinate overnight: Place the peeled eggs in an airtight container and pour the marinade over them. Seal tightly and refrigerate for at least 6 hours or preferably overnight.
  5. Serve: Enjoy your Mayak Eggs over fresh steamed rice with extra marinade drizzled on top.
