  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. In a mixer, cream together softened butter and brown sugar for about 3 minutes until fluffy. Add in maple syrup and mix for another minute.
  4. Incorporate eggs one at a time, then mix in mashed bananas and vanilla extract.
  5. Gradually add half of the dry mixture to the wet ingredients. Follow with yogurt and then the remaining dry mixture; mix until just combined, being careful not to overmix. Fold in chopped nuts.
  6. Pour batter into the prepared loaf pan, sprinkle reserved nuts on top if desired, and bake for about 50-60 minutes or until a toothpick inserted comes out clean.
  7. Let cool in the pan before transferring to a wire rack.
