  • 6 oz spinach (fresh or frozen)
  • 2 Tbsp extra virgin olive oil
  • 5 cloves garlic (minced)
  • 8 oz cream cheese
  • 1/2 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup white cheddar cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 2 Tbsp Panko breadcrumbs
  • 2 Tbsp Parmesan cheese
  • 1/2 Tbsp unsalted butter (melted)

Instructions

  1. If using fresh spinach, rinse well; if using frozen spinach, thaw and drain thoroughly.
  2. Heat olive oil in a pan over medium heat and sauté minced garlic until fragrant (about 1-2 minutes).
  3. In a mixing bowl, combine cream cheese and heavy cream; stir until smooth. Add Parmesan and white cheddar cheese.
  4. Fold in sautéed garlic and spinach; season with salt, pepper, and garlic powder.
  5. Preheat oven to 375°F (190°C). Transfer mixture to a baking dish, top with Panko breadcrumbs and additional Parmesan. Drizzle melted butter over the top.
  6. Bake for about 15 minutes until bubbly and golden brown.
