  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Prepare all ingredients by dicing vegetables and mincing garlic.
  2. In your cooking device, heat olive oil over medium heat. Sauté carrots, onion, celery, and garlic until softened (about 5 minutes).
  3. Stir in black pepper, parsley, thyme, salt, and bay leaves.
  4. Add chicken breasts and pour in chicken broth to cover.
  5. For the Instant Pot: Pressure cook on high for about 15 minutes; for crock pot: cook on low for about 6 hours; for stovetop: bring to a boil then simmer for about 30 minutes.
  6. Remove cooked chicken and shred it with forks. Add orzo pasta to the broth and cook according to package instructions (about 10 minutes).
  7. Stir in lemon juice before serving.
