  • 1 cup unsalted butter (softened)
  • 1 1/4 cups granulated sugar
  • 1/4 cup light brown sugar
  • 1 tbsp lemon zest
  • 1 large egg
  • 1 tbsp fresh lemon juice
  • 2 3/4 cups all-purpose flour (sifted)
  • 3/4 cup wild frozen blueberries
  • For coating: 1/2 cup granulated sugar, 2 tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, white sugar, and brown sugar until smooth. Add lemon zest, egg, lemon juice, and mix well.
  3. In another bowl, combine sifted flour, baking powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  4. Gently fold in the blueberries.
  5. Drop tablespoons of dough onto the prepared baking sheet with space in between each cookie.
  6. Bake for about 17 minutes until edges are golden.
  7. While baking, mix sugar and lemon zest for coating. Once cooled slightly, roll cookies in the mixture.
