  • ⅔ cup fresh lemon juice (about 45 lemons)
  • 4 large eggs
  • 2 cups sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. For the crust, mix flour, softened butter, powdered sugar, and salt in a bowl until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. In another bowl, whisk together lemon zest, lemon juice, eggs, and sugar until smooth.
  5. Pour the lemon filling over the baked crust and return to the oven for an additional 25-30 minutes until set.
  6. Allow cooling completely before cutting into squares. Dust with powdered sugar before serving.
