1/2 cup shredded cheddar cheese (or cheese of choice)
1/4 cup breadcrumbs
1 egg
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Olive oil or cooking spray for frying
Instructions
In a mixing bowl, combine leftover mashed potatoes, shredded cheese, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Heat olive oil in a frying pan over medium heat.
Use a spoon or cookie scoop to portion the mixture into small balls or patties.
