  • 1 tsp. corn starch
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup cold, unsalted butter (cubed)
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp. vanilla extract (optional)
  • 2 cups milk chocolate chips

Instructions

  1. Preheat the oven to 400°F.
  2. Whisk together the all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt in a bowl; set aside.
  3. Cream cold butter with light brown sugar in a stand mixer until fluffy. Add granulated sugar and mix until combined.
  4. Incorporate the egg (and vanilla if desired) into the mixture until well blended.
  5. Gradually add dry ingredients to the wet mixture while mixing on low speed until just combined.
  6. Gently fold in chocolate chips until evenly distributed.
  7. Use a food scale to portion out six cookies (about 5.7 oz each) onto lined baking sheets without flattening them.
  8. Bake for 10-12 minutes until golden brown on top. Let cool on the sheet for 15-30 minutes before transferring to a cooling rack.
