  • 1 clove garlic (finely minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and slice it into 2-inch pieces.
  2. Blanch the spinach in boiling salted water for 30 seconds until just wilted.
  3. Transfer the blanched spinach to an ice bath immediately to stop cooking and maintain color.
  4. Once cooled, squeeze out excess water from the spinach.
  5. In a mixing bowl, combine the cooled spinach with minced garlic, chopped green onion, soy sauce, salt, toasted sesame oil, and toasted sesame seeds. Mix well.
  6. Serve chilled or at room temperature as a side dish.
