  • 1/2 cup pumpkin seeds, unshelled
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1/3 cup honey or maple syrup
  • 1/4 teaspoon chipotle powder
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste
  • Chili flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Spread walnuts and pumpkin seeds on a baking sheet and toast for about 10 minutes until fragrant.
  2. In a small bowl, whisk together honey (or maple syrup), chipotle powder, olive oil, balsamic vinegar (or apple cider vinegar), Dijon mustard, fig jam, orange zest, orange juice, salt, black pepper, and chili flakes until well combined.
  3. In a large mixing bowl, combine salad greens and frisée leaves. Add diced apples or pears, sliced avocados, pomegranate seeds, toasted walnuts, and pumpkin seeds.
