  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. In a large Ziploc bag, combine stew meat, flour, salt, pepper, onion powder, garlic powder, rosemary, and thyme. Shake well to coat.
  3. Sear the coated meat in the hot oil until browned on all sides.
  4. Gradually stir in the beef broth to deglaze the pot.
  5. Add carrots and bay leaves; bring to a boil before reducing heat to medium-low.
  6. Cover and simmer for about 45 minutes, stirring occasionally.
  7. In the last five minutes of cooking, add frozen peas and remove bay leaves before serving.
