  • ½ cup light brown sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ⅓ cup dutch processed cocoa powder
  • 1 cup white chocolate chips

Instructions

  1. In a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, beat the butter, white sugar, and light brown sugar for about 2 minutes until light and fluffy.
  2. Scrape the sides and bottom of the bowl with a rubber spatula. Add the egg, egg yolk, and vanilla extract. Beat on medium speed until well combined (about 1 minute).
  3. Add all dry ingredients: flour, baking powder, baking soda, salt, and cocoa powder. Mix on low speed to avoid messiness, scraping down the sides to ensure everything is well mixed.
  4. Gently fold in the white chocolate chips. Cover the dough and chill in the fridge for 45–60 minutes.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop about 2 tablespoons of dough onto each prepared baking sheet, allowing about 2 inches of space between each cookie.
  7. Bake for 10–11 minutes, then remove from the oven and press extra white chocolate chips on top for a bakery-style finish.
