  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 red bell pepper
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 cup white rice
  • 1 tbsp olive oil
  • Salt & pepper
  • 1 tbsp lemon juice

  1. Cook the Rice: Bring 2 cups of water to a boil in a pot with a pinch of salt. Add 1 cup of white rice, cover, and simmer until fluffy.
  2. Roast Cherry Tomatoes: Preheat the oven to 200°C (400°F). Toss cherry tomatoes with olive oil, salt, and pepper, then roast for 10-12 minutes.
  3. Cook Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown.
  4. Prepare Sauce: Stir in mustard, honey, soy sauce, and lemon juice; cook until thickened.
  5. Combine: Add sliced red bell pepper to the skillet; cook for an additional 2 minutes. Serve over spinach with roasted tomatoes and rice.
