  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter, softened
  • 16 chocolate batons or 8 oz semi-sweet chocolate

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and yeast. Gradually add cold milk while kneading for about 5 minutes until soft but slightly tacky. Cover and refrigerate for 30 minutes.
  2. Beat softened butter and flour until smooth; shape into a rectangle and refrigerate for another 30 minutes.
  3. Roll dough into a rectangle, encase chilled butter layer inside, seal edges tightly, and roll out again. Fold into thirds; refrigerate for at least 4 hours.
  4. Shape croissants by cutting rectangles from rolled dough, placing chocolate at one end, and rolling tightly.
  5. Proof croissants at room temperature for about an hour before baking at preheated oven (400°F) for about 20 minutes until golden brown.
