  • 3 lbs lamb shoulder
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, smashed
  • 1 cup beef or vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup fresh mint leaves, finely chopped
  • 1/4 cup flat-leaf parsley, finely chopped
  • Lemon zest (optional)

Instructions

  1. Preheat a slow cooker or oven to 325°F (165°C). Heat olive oil in a Dutch oven over medium-high heat.
  2. Season the lamb shoulder with salt and pepper, then sear it on all sides until golden brown, about 3–5 minutes per side. Remove from heat.
  3. In the same pot, sauté sliced onions and smashed garlic until softened, about 5 minutes.
  4. Return the lamb to the pot along with broth, rosemary, thyme, salt, and pepper; mix well.
  5. Cover and cook on low for 6–8 hours in a slow cooker or in the oven until tender.
  6. Prepare gremolata by mixing mint leaves, parsley, minced garlic, lemon zest (if desired), and a pinch of salt in a bowl.
  7. Once cooked, shred or slice the lamb and serve warm topped with gremolata.
