  • 20 g soy protein crisps (or oats)
  • 30 g light butter (or oil)
  • 250 g light cream cheese
  • 350 g yogurt (vanilla or plain)
  • 2 eggs
  • 100 g granulated zero-calorie sweetener
  • 150 g raspberries (fresh or frozen)

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a food processor, blend the digestive biscuits and protein crisps into fine crumbs. Mix in melted butter until combined.
  3. Press the crumb mixture into a brownie pan lined with parchment paper to form the base.
  4. Bake for 10 minutes and allow cooling.
  5. Whisk together cream cheese, yogurt, eggs, sweetener, protein powder, vanilla extract, lemon juice, and zest until well combined.
  6. Layer half of the cheesecake batter over the cooled base, followed by half of the raspberries; repeat layering with remaining batter and raspberries.
  7. Bake for an additional 30-40 minutes until slightly jiggly in the center.
  8. Cool slightly before refrigerating for at least five hours before slicing.
