  • 1 large egg
  • 1 tablespoon vanilla extract (15 ml)
  • 3 tablespoons light brown sugar (38 g)
  • 2 tablespoons granulated sugar (25 g)
  • 1 teaspoon ground cinnamon (2.6 g)
  • 1 teaspoon baking powder (4 g)
  • 1 teaspoon baking soda (5 g)
  • ½ teaspoon salt (2.5 g)
  • 1½ cups all-purpose flour (180 g)
  • 2 tablespoons unsalted butter, melted or applesauce (28 g butter or 30 g applesauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a standard 9×5'' loaf pan, optionally lining with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth. Add the egg, vanilla extract, brown sugar, granulated sugar, and cinnamon; stir until combined.
  3. In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add this to the banana mixture and stir until just combined.
  4. Gently fold in the melted butter.
  5. Pour batter into the prepared loaf pan and bake for 35-45 minutes or until a toothpick inserted comes out clean.
  6. Let cool in the pan for about 5-10 minutes before transferring to a wire rack to cool completely.
