  • 175 g baking spread (softened, unsalted)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g butter (softened, unsalted)
  • 400 g icing sugar
  • 1 tsp vanilla extract
  • Green food coloring
  • Yellow food coloring
  • 150 g tinned custard
  • Candy eyes for decoration

Instructions

  1. Preheat the oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with black cupcake cases.
  2. In a bowl, mix baking spread and caster sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.
  3. Gradually fold in self-raising flour and black food coloring until well combined.
  4. Divide batter among cupcake cases and bake for 25–30 minutes until cooked through. Cool on a rack.
  5. Core cooled cupcakes and fill with green-tinted custard.
  6. For buttercream, mix softened butter and icing sugar until smooth; add vanilla extract, milk, and food coloring until desired shade is achieved.
  7. Frost each cupcake with the green buttercream using a piping bag or spoon. Decorate with candy eyes.
