  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan

Instructions

  1. Marinate the chicken by combining olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Rub this mixture over the chicken breasts.
  2. Grill the chicken on medium-high heat for 5–6 minutes per side until fully cooked.
  3. Toss halved Brussels sprouts in olive oil, salt, and pepper; roast on a baking sheet at 200C (390F) for about 20 minutes until crispy.
  4. For the sauce, melt butter in a saucepan, stir in flour to create a roux, gradually whisk in milk until thickened; add minced garlic and grated Parmesan until smooth.
  5. Assemble by slicing the chicken and layering it with Brussels sprouts in bowls; drizzle generously with sauce.
