  • 18 ounces green enchilada sauce
  • 3 cups rotisserie chicken (cubed)
  • 8 ounces cream cheese (room temperature)
  • 4 ounces canned green chilis
  • 3 cups shredded cheddar cheese
  • 8 large flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup chopped tomatoes
  • 1 whole avocado (sliced)

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Lightly spray a 9" x 13" baking dish with non-stick cooking spray and spread about 1 cup of enchilada sauce on the bottom.
  3. In a mixing bowl, combine the chicken, cream cheese, green chilis, and 2 cups of shredded cheese until well mixed.
  4. Place about 1/2 cup of the filling in each tortilla, roll it up tightly, and place seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  6. Bake uncovered for about 30 minutes or until heated through and cheese is golden brown.
  7. Let cool slightly before serving with desired toppings.
