  • 3 cups cooked rotini or penne pasta
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of half a lemon

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a small bowl, whisk together the olive oil, red apple vinegar, Dijon mustard, dried oregano, garlic powder, salt, black pepper, and lemon juice until well combined.
  3. In a large mixing bowl, combine the pasta with cherry tomatoes, cucumber, red bell pepper, red onion, olives, and feta cheese.
  4. Pour the dressing over the salad mixture and toss until evenly coated.
  5. Garnish with fresh parsley and chill for at least 30 minutes before serving.
