  • 1 cup diced yellow onion
  • ½ cup diced carrots
  • ½ cup diced celery
  • 5 cloves garlic (minced)
  • 2 strips lemon peel
  • ½ tbsp dried oregano
  • 2 bay leaves
  • 6 cups chicken broth
  • ½ cup dry white rice
  • 1 egg
  • 1 egg yolk
  • 2 cups shredded chicken breast
  • 34 oz baby spinach
  • ¼ cup lemon juice
  • 1 tbsp fresh chopped dill
  • salt + pepper (to taste)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, celery, and lemon peel; season with salt and pepper. Sauté for about 5 minutes until onions are translucent.
  2. Stir in garlic and cook for an additional minute. Then add oregano, bay leaves, and chicken broth; bring to a boil.
  3. Add rice, reduce heat to medium-low, and cook for about 10 minutes.
  4. Remove bay leaves and lemon peel from the pot.
  5. In a bowl, whisk eggs together; temper by slowly adding hot broth while whisking continuously.
  6. Slowly stir tempered eggs back into the soup along with shredded chicken, spinach, dill, and lemon juice. Cook until heated through.
