  • 3 large yellow onions (thinly sliced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup shredded Gruyère cheese
  • ¼ cup heavy cream
  • 1 egg (beaten for brushing)
  • Fresh thyme leaves (for flavor)
  • 1 tbsp Dijon mustard (optional)
  • 1 tsp sugar
  • Salt to taste
  • ½ tsp black pepper

Instructions

  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and a pinch of salt. Cook slowly for about 25–30 minutes until the onions are golden brown and jammy.
  2. Preheat your oven to 400°F (200°C).
  3. Place the puff pastry on a parchment-lined baking sheet. Score a 1-inch border around the edges and prick the inner section with a fork. Brush the edges with beaten egg and bake for 10 minutes.
  4. In a bowl, whisk together cream, egg, pepper, and Gruyère cheese. Spread Dijon mustard over the pre-baked pastry base if using.
  5. Pour the cheese mixture into the tart shell and top with caramelized onions.
  6. Bake for an additional 15–18 minutes until puffed and golden brown. Garnish with fresh thyme before serving.
