  • 2 tablespoons unsulphured molasses (43 grams)
  • 2¼ cups all-purpose flour (270 grams)
  • 1 tablespoon ground ginger (9 grams)
  • 1 teaspoon ground cinnamon (3 grams)
  • 1 teaspoon apple pie spice (3 grams)
  • ¾ teaspoon ground cloves
  • Icing and sprinkles

Instructions

  1. In a stand mixer, beat butter with sugars and both salts until light and fluffy.
  2. Mix in the egg and molasses until combined.
  3. Whisk together flour and spices in a bowl, then gradually add to the wet mixture until incorporated.
  4. Divide dough, roll between parchment paper to ⅜-inch thickness, cover, and chill for at least 2 hours.
  5. Preheat oven to 350°F; cut shapes from chilled dough and place on lined baking sheets.
  6. Bake for 10-12 minutes or until edges darken slightly; cool on racks before decorating.
