  • 2 boneless skinless chicken thighs
  • 2 garlic cloves
  • 15g fresh ginger
  • 1 red chili
  • 1 lime
  • 25g fresh coriander
  • 25g fresh mint
  • 350ml water
  • Olive oil
  • 1 curry powder
  • Salt
  • Black pepper

Instructions

  1. Marinate chicken: Grate half the garlic into a bowl, squeeze in juice from half the lime, season with salt, add chicken thighs, and marinate for at least 30 minutes.
  2. Prepare aromatics: Slice remaining garlic, cut ginger into matchsticks, and finely slice red chili.
  3. Cook chicken: Heat olive oil in a frying pan over medium heat. Add marinated chicken and cook until charred and cooked through (10-15 minutes). Remove from the pan.
  4. Make broth: In the same pan, fry ginger, garlic, and chili for about 3 minutes. Add curry powder for an additional minute. Pour in water and simmer for 5 minutes; finish with lime juice and salt.
  5. Assemble: Reheat rice as per package directions. Divide rice into bowls, pour broth over it, top with sliced chicken and herb salad (coriander, mint, red onion).
