  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large mixing bowl, combine the ground chicken, grated Parmesan, panko breadcrumbs, eggs, minced garlic, and milk. Season with garlic powder, onion powder, dried basil, dried parsley, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf on the baking sheet or press evenly into the loaf pan.
  4. Bake for 40–45 minutes until the internal temperature reaches 165°F (74°C).
  5. For the glaze, melt butter in a saucepan over medium heat and sauté minced garlic for 1–2 minutes. Stir in additional Parmesan cheese and parsley until thickened.
  6. Brush the glaze over the meatloaf and return to the oven for an additional 5–7 minutes.
  7. Let it rest for about 5 minutes before slicing and serving.
