  • 1/2 teaspoon smoked paprika

Instructions

  1. Cook rigatoni according to package instructions until al dente. Reserve about 1 cup of pasta water and drain.
  2. In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant. Whisk in flour, then gradually add milk while stirring constantly until the mixture thickens. Stir in provolone and Parmesan until melted. Season with nutmeg, salt, and pepper.
