  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • Optional toppings: chili flakes, scallions, honey mustard

  1. Preheat your oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until caramelized.
  2. Prepare rice according to package instructions; keep warm.
