  • 1/4 cup creamy peanut butter (or almond butter)
  • 2 tablespoons honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 cup dark chocolate chips (for coating)
  • Optional toppings: crushed peanuts, sea salt flakes, shredded coconut

Instructions

  1. In a mixing bowl, blend Greek yogurt, peanut butter, honey, and vanilla until smooth. Fold in mini chocolate chips.
  2. Line a baking sheet with parchment paper and scoop tablespoon-sized portions onto it. Flatten gently into discs and freeze for 1 to 2 hours.
  3. Melt dark chocolate chips (and coconut oil if using) until smooth.
  4. Dip each frozen disc in melted chocolate and return to the baking sheet. Sprinkle with desired toppings while the chocolate is still wet.
  5. Freeze again for 15 to 20 minutes until set.
