  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 envelope onion soup mix
  • 1 cup shredded cheddar cheese
  • 12 cups frozen mixed vegetables

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish.
  2. In a large bowl, combine cream of chicken soup, cream of mushroom soup, water, and uncooked instant rice. Mix well.
  3. Pour the mixture into the greased casserole dish evenly.
  4. Optionally stir in frozen vegetables and shredded cheese for added texture and flavor.
  5. Place raw chicken breasts on top of the rice mixture.
  6. Sprinkle onion soup mix over the chicken for enhanced seasoning.
  7. Cover with aluminum foil and bake for 60 minutes without lifting the foil.
  8. After baking, remove the foil and check if the chicken is fully cooked (165°F/75°C).
  9. Optionally broil uncovered for 3–5 minutes until golden brown.
  10. Allow to rest for 5–10 minutes before serving.
