  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F). Line a 23 cm (9 inch) springform pan with parchment paper and grease the sides lightly.
  2. Boil the oranges in a pot of water for about 60 minutes until soft. Cool, remove seeds, and puree until smooth.
  3. In a bowl, whisk together the eggs and sugar until pale and thickened. Stir in the orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Gently fold into the egg mixture until just combined.
  5. Pour batter into the prepared pan and smooth the top. Tap lightly to release air bubbles.
  6. Bake for 50 to 60 minutes until set; a skewer inserted should come out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
