  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. Brown the butter in a stainless steel pan over medium heat until it turns amber (about 10 minutes). Transfer to a mixing bowl.
  2. Mix in ground espresso and let cool to room temperature (20–30 minutes).
  3. Whisk together light brown sugar and granulated sugar until combined with the cooled butter.
  4. Add one egg, one egg yolk, and vanilla extract; whisk until smooth.
  5. Fold in flour, baking soda, salt, and chopped chocolate until just combined.
  6. Scoop dough onto parchment-lined baking tray and chill for 3–4 hours (overnight preferred).
  7. Preheat oven to 350°F (180°C) and bake chilled dough for 10–12 minutes until edges are golden.
  8. Cool on wire rack before serving.
