  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until softened, about 5 minutes.
  2. Add ground turkey and cook until browned, breaking it into smaller pieces.
  3. Stir in tomato paste and spices: chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper.
  4. Mix in drained kidney beans, diced tomatoes (with juices), and chicken broth. Bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally.
  6. Taste and season with salt and pepper as needed before serving hot with your favorite toppings.
