  • 1 can (15 oz) cannellini beans, drained
  • 4 cups vegetable broth
  • 1 cup small pasta (like ditalini)
  • 2 cups baby spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté the diced onion and minced garlic until fragrant.
  2. Add chopped carrots and celery; cook for about five minutes.
  3. Stir in zucchini and green beans; continue cooking for another few minutes.
  4. Add diced tomatoes and cannellini beans along with oregano, basil, salt, and pepper.
  5. Pour in vegetable broth; bring to a boil before reducing heat to simmer for 15 minutes.
  6. Add the small pasta and cook until tender (approximately ten minutes).
  7. Stir in baby spinach until wilted before serving hot.
