  • 1 pound ground turkey or chicken sausage
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic (minced)
  • 1 jar (24 ounces) marinara sauce
  • 1 quart beef broth
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 cup dry ditalini pasta
  • 1 can (15 ounces) dark red kidney beans (drained and rinsed)
  • 1 can (15 ounces) great northern beans (drained and rinsed)
  • Finely shredded Romano or Parmesan cheese for serving

Instructions

  1. In a large stock pot, heat one tablespoon of olive oil over medium-high heat. Add the ground sausage and break it into crumbles as it browns. Drain excess fat and set aside.
  2. In the same pot, add another tablespoon of olive oil. Sauté the chopped onion, diced carrots, and diced celery until the onions are translucent, about 5–6 minutes. Add minced garlic and cook for an additional minute.
  3. Return the browned sausage to the pot along with marinara sauce, beef broth, diced tomatoes, and spices. Bring to a boil, then reduce heat to low. Cover and simmer for about 15–20 minutes until vegetables soften.
  4. While the soup simmers, cook ditalini pasta according to package instructions until al dente; drain.
  5. Stir in the cooked pasta and both types of beans into the soup. Allow everything to heat through for a few more minutes; add water if desired for thinner consistency.
  6. Serve hot in bowls topped with grated cheese.
