  • 3 medium celery ribs, diced
  • 4 medium carrots, diced
  • 3 medium zucchini, diced
  • 1 tablespoon minced garlic
  • 1 (28 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can white cannellini beans
  • 1 (15 ounce) can kidney beans
  • 6 cups vegetable broth
  • 8 ounces elbow macaroni or shell pasta
  • 1 cup baby spinach

Instructions

  1. In a large soup pot, heat the salted butter and olive oil over medium heat.
  2. Sauté the diced onion until soft, then add celery, carrots, and zucchini; cook for about 8 to 10 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in canned tomatoes (with juices), tomato sauce, both types of beans, vegetable broth, basil, and oregano; bring to a boil.
  5. Add pasta and simmer until tender (about 10 to 12 minutes).
  6. In the last two minutes of cooking, stir in chopped baby spinach until wilted.
