  • 1 pound ground chicken or turkey
  • 3 medium carrots, diced
  • 1 medium onion, diced
  • 23 ribs celery, diced
  • 1 medium red bell pepper, finely chopped
  • 23 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1 ½ cups Ditali pasta (or any small pasta)
  • 1 ½ cups fresh spinach, chopped
  • Italian seasoning, salt, and black pepper to taste

Instructions

  1. In a large pot over medium-high heat, crumble the ground chicken or turkey. Cook until browned and no longer pink. Remove from the pot and set aside.
  2. In the same pot, add onions, carrots, celery, and red bell pepper. Sauté for about 5-7 minutes until softened. Stir in garlic and seasonings; cook for another minute.
  3. Return the cooked meat to the pot. Add chicken broth and diced tomatoes with their juice; bring to a boil and then reduce heat to low. Simmer for about 10-15 minutes.
  4. Stir in Ditali pasta and cook until al dente, around 10 minutes.
  5. Add chopped spinach just before serving and cook until wilted.
  6. Serve hot garnished with freshly grated cheese and basil if desired.
