  • 5 shiitake mushrooms (sliced)
  • 1/4 cup carrot (julienned)
  • 12 tbsp red chili (sliced, optional)
  • 1/2 cup soft tofu (cut into strips)
  • 2 large eggs (beaten)
  • 2 tbsp cornstarch
  • 2 tbsp white vinegar

Instructions

  1. In a small bowl, mix cornstarch with cold water to create a slurry.
  2. In a medium pot, combine chicken stock, soy sauces, sugar, bouillon powder, and sesame oil—bring to a boil.
  3. Reduce heat and add shiitake mushrooms, carrots, seafood mushrooms, and chili; simmer for 1-2 minutes.
  4. Gently add tofu strips and stir.
  5. Stir in the cornstarch slurry to thicken the soup; simmer briefly.
  6. Slowly pour in beaten eggs while stirring for ribbons.
  7. Add green onions; season with vinegar, salt, and white pepper.
