  • 8 skinless chicken thighs
  • 400ml coconut milk
  • 2 tablespoons Thai yellow curry paste
  • 500g cooked rice
  • Fresh coriander
  • Lime juice
  • Olive oil
  • 1 garlic clove
  • 2 tablespoons oyster sauce
  • 300ml water
  • 0.5 tablespoons sugar
  • Salt
  • Black pepper
  • Crispy fried onions
  • Chili oil

Instructions

  1. Marinate chicken in minced garlic and half the oyster sauce; season with salt and pepper.
  2. In a saucepan, heat a splash of coconut milk, then stir in curry paste and coriander stalks.
  3. Add remaining coconut milk and water; bring to boil and simmer for 10-15 minutes.
  4. In a frying pan, cook marinated chicken until charred and fully cooked.
  5. Serve rice in bowls, ladle broth on top, add chicken slices, garnish with crispy onions, chili oil, and fresh coriander.
