  • 2 tablespoons whole cumin seeds
  • 2 teaspoons sichuan peppercorns
  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar (or dry apple juice)
  • 1 teaspoon salt
  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil
  • 3 tablespoons chinkiang vinegar
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 8 cloves garlic (minced)
  • 2 inches ginger (minced)
  • 1 red onion (thinly sliced)
  • 1 hot green chili (sliced)
  • 1/2 bunch cilantro (chopped)

Instructions

  1. Prepare your hand-pulled noodles according to your recipe or package instructions.
  2. Marinate the sliced lamb with salt, vinegar, cumin seeds, sichuan peppercorns, coriander seeds, and cornstarch for at least 10 minutes.
  3. Heat a skillet over medium-high heat with peanut oil. Stir-fry the lamb in batches until browned and cooked through (about 3–5 minutes). Remove from skillet.
  4. In the same skillet, sauté minced garlic, ginger, sliced red onion, and green chili until fragrant.
  5. Return the cooked lamb to the skillet along with homemade chili oil, soy sauces, and additional vinegar. Mix well.
  6. Boil the prepared noodles until al dente; drain and rinse briefly under cold water.
  7. Serve noodles topped with the lamb mixture and garnish with chopped cilantro.
