  • 1.25 lb boneless, skinless chicken breasts
  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges
  • Avocado slices
  • Greek yogurt
  • Chopped red onion
  • Fresh dill
  • Crumbled feta
  • Crushed red pepper flakes

Instructions

  1. Gather all ingredients. Chop the onion and garlic.
  2. In your crockpot, combine chicken breasts, white beans, chicken broth, onion, garlic, salt, oregano, thyme, and cumin. Mix well.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is cooked through.
  4. Shred the chicken in the pot using two forks and mix back into the chili.
  5. Serve warm with your favorite toppings such as lemon wedges, avocado slices, Greek yogurt, chopped red onion, fresh dill, crumbled feta, or crushed red pepper flakes.
