  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes, with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional, for topping)
  • fresh cilantro (optional, for garnish)

Instructions

  1. In a large skillet over medium heat, brown 1 lb of ground beef until fully cooked. Add in 1 diced onion and 2 minced garlic cloves; sauté until translucent (about 3–5 minutes).
  2. Transfer the beef mixture to a slow cooker. Add 1 can each of drained kidney beans, black beans, corn, and 28 oz of diced tomatoes (with juice), along with 2 cups of beef broth.
  3. Stir in 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  4. Cover and cook on low for about 6 hours or high for 3 hours.
  5. Once done, stir well before serving and adjust seasoning as needed.
