  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 pound ribeye steak or sirloin, thinly sliced (or ground beef)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth (or water)
  • 2 cups shredded provolone cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil (for browning the beef)

Instructions

  1. Brown the beef in a large skillet with olive oil over medium-high heat. Season with garlic powder, onion powder, salt, and pepper.
  2. While the beef cooks, slice onions and bell peppers into thin strips.
  3. Layer half of the sliced potatoes in the slow cooker. Add half of the cooked beef, onions, bell peppers, and cheese. Repeat layers with remaining ingredients.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth until smooth; pour over the layered ingredients.
  5. Cook on low for 6 hours or high for 3 hours until the potatoes are tender.
  6. During the last 30 minutes, sprinkle remaining cheese on top.
