  • 1 tablespoon avocado oil
  • coarse ground salt
  • fresh ground pepper
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion (thinly sliced)
  • 8 whole cloves garlic (smashed)
  • 32 ounces beef stock
  • 1 tablespoon tomato paste
  • 14.5 ounce can fire roasted diced tomatoes
  • ¼ cup apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 cinnamon stick
  • 3 dry bay leaves
  • 1 teaspoon smoked paprika
  • ½ tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • corn or flour tortillas
  • lime wedges
  • fresh cilantro leaves
  • diced white onion
  • shredded Oaxacan cheese (or Italian cheese)

Instructions

  1. Sear the beef in a hot cast iron skillet with avocado oil until browned on both sides.
  2. Transfer the seared beef to a slow cooker and add remaining ingredients; stir to combine.
  3. Cover and cook on low for 8 hours.
  4. Shred the beef after cooking and blend the sauce until smooth; mix back into the shredded meat.
