  • 1 large yellow onion
  • 1 cup carrots
  • ¾ cup celery
  • 4 cups low-sodium chicken broth
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans
  • 1 (16 oz) box ditalini pasta
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 6 cups water

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy. Drain excess fat and chop into small pieces.
  2. In the slow cooker, combine turkey bacon, diced onion, sliced carrots, diced celery, garlic, thyme, basil, parsley, salt, pepper, tomato paste, crushed tomatoes, cannellini beans, chicken broth, and water; stir well.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours.
  4. About 30 minutes before serving, add uncooked ditalini pasta to the slow cooker; stir gently to combine.
  5. Serve hot with grated Parmesan Reggiano on top.
