  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 1 tbsp cornstarch
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)
  • 1 tbsp steak seasoning (optional)
  • 1½ tsp thyme (optional)

Instructions

  1. Begin by coating each side of the chuck roast with oil. In a small bowl, combine the steak seasoning and dried thyme. Liberally season both sides of the roast to enhance its flavor.
  2. Heat a skillet over high heat. Once hot, sear each side of the roast for 2-3 minutes until browned. This step locks in flavors before transferring it to the slow cooker.
  3. Pour beef broth into the skillet after removing the roast. Allow it to simmer for one minute while scraping up any browned bits from the bottom. Pour all liquid from the skillet into the slow cooker over the roast.
  4. If using vegetables, wash, peel, and cut them into large pieces. Place them in a large bowl, drizzle with oil, sprinkle on seasonings, and mix until evenly coated. Arrange these vegetables atop the roast in the slow cooker.
  5. Cover your slow cooker and cook on low for approximately 7-8 hours or on high for 3.5-4 hours. For best results, choose low heat whenever possible.
  6. Around hour 7-8 (or 3.5-4 if using high), check for tenderness using a fork. When edges begin to fall apart easily, dissolve cornstarch in water. Pour this mixture into the liquid left in the slow cooker and stir well to combine.
  7. Allow to cook covered for one more hour until super tender. If not thick enough after an hour, leave the lid off while cooking on high; this will help evaporate excess water.
  8. Carefully remove meat from slow cooker onto a cutting board. Gently separate meat from fatty sections; discard fat. Serve large chunks on a platter or return them to the slow cooker for serving convenience.
