  • ½ tsp crushed red pepper flakes

  • ¼ tsp ground black pepper
  • 16 oz button mushrooms
  • 10 oz cherry tomatoes
  • 4 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (roughly chopped)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • ½ cup grated parmesan
  • 2 Tbsp fresh chopped basil

Instructions

  1. In a large sauté pan, melt 2 Tbsp unsalted butter over medium heat. Add salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper; cook until fragrant.
  2. Add sliced button mushrooms, cherry tomatoes, minced garlic, and chopped sun-dried tomatoes. Cook for about 15 minutes until the mushrooms release moisture.
  3. Stir in vegetable broth and simmer until thickened (about 10 minutes).
  4. Remove from heat and mix in heavy cream, grated parmesan cheese, and fresh basil. Serve warm over rice or pasta.
