  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs fresh tomatoes (roma, plum or tomatoes on the vine)
  • 1/2 cup basil leaves (about 1012 large leaves) or 2 teaspoons dried
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prep the ingredients by slicing the onion and mincing the garlic. Cut tomatoes into quarters.
  2. In a heavy-bottomed pan, heat olive oil (or water) over medium heat. Sauté the onion until translucent (about 7 minutes), then add garlic and cook for an additional minute.
  3. Add tomatoes, basil leaves, oregano, salt, pepper, and vegetable broth to the pot. Stir well.
  4. Bring to a boil, cover pot, reduce heat to low and simmer for about 15 minutes.
  5. Allow soup to cool slightly before blending with an immersion blender until smooth. Adjust seasoning if needed.
  6. Serve warm with a drizzle of vegan cream on top.
